It's no secret -- I love to entertain. But one thing I've learned over the years is that you don't need to invest a lot of time, money, or frustration when creating a festive occasion. I've created an arsenal of go-to recipes and easy to assemble appetizers that I can throw together on a moment's notice. Today I'd like to share one of my favorite quick prep and guest favorite appetizers, gorgonzola stuffed dates.

Ingredients

  • 1 package Medjool Dates
  • 1 small wedge Gorgonzola cheese

Instructions

Using a small, sharp knife, slice the dates lengthwise and remove the pit. 

Slice the cheese into small pieces, roughly one teaspoonful in size. Stuff a piece of the cheese into each half of the date. 

Serve at room temperature.

Yep, you read that right. That's really all there is too it! This dish, the perfect marriage of salty and sweet, is a always a hit at our parties and gatherings. In fact, I can't think of a time that we've had any left at the end of the night. 

I've also seen these presented wrapped in bacon, which might be super tasty, but we're a no pork (and Alex a no meat) family. If you do it this way, let us know all of the deliciousness we're missing out on.

I'm drooling everywhere. It's so simple but looks and sounds extremely delicious. One of my favorite quick and simple recipes is cheddar stuffed jalapenos. 1) Slice open jalapenos. 2) Put cheese in jalapenos. 3) Put in oven. 4) Remove and enjoy when cheese is melted. I hears these are also delicious when wrapped in bacon but my significant other can't eat pork either. Still a rather tasty treat!

Mmm. I love jalapenos, and I love cheese, so these sound like a winner to me. Do you recall the temperature you set your oven to? Thanks for the tip!

I love these. My variation is to add a small drizzle of good quality honey... Takes it to another level entirely!

My quick go-to appetizer is almost exactly this – only I use cream cheese, and put a single red peppercorn on each. Sometimes I do the bacon wrapping, but I like it perfectly fine without as well. Yum!

I never thought of using gorgonzola, but just imagining that makes my mouth water. Will have to try that one.

My version of this recipe is fill the date with soft goat cheese, wrap with apple smoked bacon, secure with toothpick, and bake (on foil) for about 10 minutes at 350 degrees or until bacon is cooked.

Delesh! But then it has to be because how could something made with dates, bacon, and cheese...not be tasty?

When these are wrapped in bacon, they're called "devils on horseback". Was this intentional? -- did you serve at the Halloween party :)
